Baked Del Monico Pudding
Ingredients
2 eggs seperated
2 Tbsp sugar
3 large or 4 medium Bananas
Juice of 1 lemon
2 cups of Milk
1/3 of a cup of cornstarch
½ tspn salt
Method
Scald 2 cups of milk in a double boiler. Sift the cornstarch & the salt with ¼ of a cup of sugar. Then stir into the hot milk. Stir mixture until it thickens, then cover and let it cook for 15 mins, taking care to letting the mixture burn at the bottom of the pan.
Beat egg yolks
Add 2 t bspns of sugar to the beaten eggs & beat
Stir into the hot milk mixture
Remove the skin of the bananas and slice them into a pudding dish.
Squeeze lemon over the bananas and pour the liquid mixture over them.
Make Meringue with the whites of the two eggs
Pour the meringue over the bananas & milk mixture, sprinkle with sugar and bake in a slow cool oven until the meringue is delicately coloured – this should take approx 15mins
Serve hot.
