Del Monico Pudding
Ingredients
2 pints milk (40 fl ozs)
4 tbspn cornstarch
4 eggs separated
6 tbspn sugar
Pinch salt
½ tspn vanilla
Method
Put milk in a double boiler and scald
In a small bowl wet the cornstarch with a little cold milk (taken from the 2 pints) & then add to the heated milk in the pan
Beat egg yolks with 3 tbspn sugar & stir into the hot milk & mix well
Remove from the heat when thick and cool
When cold pour the mixture into a baking dish
Whip egg whites stiff with 3 tbspns sugar & the vanilla. Mix well
Put the whipped mixture on top of the pudding & brown in the oven at 375 deg F for 30 – 45 mins
