Tagliatelle with Mushroom Sauce

Ok this is a recipe that I found and have cooked and realy like.- Its simple, with readily available ingredients.

Ingredients:

250g chestnut mushrooms

Handful of porcini or other mushrooms but can use onluychestnut mushrooms (which I have) then use 300g

250ml Soya or mix of soya and single cream

100g Spinach

salt & pepper

Method:

Cut mushrooms in quarters and fry for 3 mins - season with salt and pepper

Remove from the heat and keep half warm

Tip the other of the mushrooms in a food processor

Heat 250ml soya/cream to boiling point and then pour into the blender & blend with the mushrooms.

Cookd 300g dried weight pasta

Drain when cooked and retain 100ml of the water

Return the pasta and the 100ml water to pan and add the processed mushroom sauce. Add spinach.

Stir until the spinach leaves are wilted - season.

Serve with the reserved mushrooms sprinkled on top & garnish with drizzled olive oil & ground pepper.

Serve with a nice Italian Argiano or valpolicella
