Polenta (Cornmeal)
The mystery of polenta which is mainly eaten in the North of Italy.
Salt
Water
butter
Polenta grains - can now be found in supermarkets.
Put 4 cups water in a pot wiith a good pinch of salt to taste (polenta is a bit bland without the salt)
Put 2 cups of water in a bowl and add 2 cups of polenta & whisk
Stir the polenta mix in the big pot of salted water and simmer & stir for approx 20-30 mins when it will begin to thicken and harden.
Melt in butter.
At this point serve polenta immediately and eat as a substitute for potato or rice or leave the polenta to cool & it will then set into a slab. This can be eaten in this hardened state with something on top or is often fried.
