Zabaione
Ingredients:
6 large egg yolks 120g sugar 1 wine glass of sweet Marsala wine
Method:
Beat the egg yolks in a bowl and heat over a bain-marie. Add the sugar, sirring continuously. If the mixture appears to be too thick add a little water. Mix well then add the Sweet Marsala wine little by little. Whisk until smooth. Place in small glass bowls and refrigerate. Remove immediately before serving.
