Chicken breasts with Marsala & Chilli Peppers
Ingredients:
6 Chicken breasts boned and skinned 60g butter 2 onions 2 glasses dry white wine 1/2 glass Marsala wine 1 cup double cream 1 small red chilli pepper finely chopped salt
Method:
In a large frying pan melt a little butter and cook the chicken breasts for a few minutes on each side, add the white wine, some salt to taste and continue cooking until the wine has evaporated. In the meantime fry gently the onions and the pepper for two minutes, add the Marsala wine and the cream. bring to simmering point.
To serve: Arrange the chicken breasts on a serving dish and pour the marsala sauce on top. Garnish with some fresh chopped parsley
